My personal list in no paticular order, feel free to disagree.
Evangelion-Got me into anime, and was the opiate for my mind for at least two
years. Arguably the most influential anime of all time. Love it or hate it,
we've all seen it, and we all know why.
Cowboy Bebop-Nuff said.
Rurouni Kenshin/Samurai X-All around the best samurai action series I've seen.
Although the series had a terrible ending and it's rather cliche at times, the
majortiy of the central characters are great and I've yet to see another series
do swords fights as well.
Eureka Seven-My newest favorite. If you've only seen the dubbed version on tv or
dropped it after the first few episodes, forget everything and watch it subbed
past episode 13, you'll see why it's on here.
And then you've got your classic feature films:
Ghost in the Shell-more than a decade after the original's release and it still
looks better visually than half the stuff on TV today. Trippy, intelligent, and
wicked cool, it remains the epitomy of the cyberpunk genre IMHO. I hold the
series and the original manga in similar regard.
Ninja Scroll-No plot, just good art and samurai ass whooping. For whatever
reason I never get tired of seeing this movie.
Hmm I'm more into drama so I would say
Gankutsuou - Great animation btw
Gunslinger Girls - Girls with guns, but with more emotion
PlanetES - Sci-fi but realistic
Ghost in the Shell - All incarnations, but Innocence a little less so
All the Miyazaki movie I've seen >.> lol
Other anime I liked which do not fit into drama
TMoSH (Suzumiya Haruhi) - Funny great animation too
Genshiken - Funny riffing on the whole culture
Well then, here are the animes I've seen so far that were worth getting a
straight 10.0 on Anidb:
Love Hina (hillarious and nice slice of romance; kinda started my real interest
into animes; the manga should also be mentioned, it has it's own greatness,
focussing more on character development and reaches further into the future;
both definitely worth their time)
Rurouni Kenshin: Meiji Kenkaku Romantan - Tsuiokuhen (also known as "Trust
and Betrayal or Reminiscence; a wonderful background-story for a great anime;
one of the saddest plots I've ever seen, heartbraking, yet beautiful.)
Great Teacher Onizuka (One of the best lead roles I've seen, who wouldn't like
to have that teacher? )
Kimi ga Nozomu Eien (The best Romance Anime I have experienced so far; deeply
sad moments for me, I really felt with the characters, even when rewatching it;
and it has a really good ending imo, it felt definitely right although it is sad
in some aspects)
Fullmetal Alchemist (What an overall greatness: unique story, great characters,
nice humor, some slice of romance without overdoing it, good ending; this is one
of the few shows you can also recommend to someone who is basically not into
animes, it's easily able to withstand competition to normal series)
Maburaho (judging from the average of 7.15 on Anidb this feels kinda surprising
for myself to list it after those mostly commonly acknowledged big shows, but it
was really a great show for me; the story felt pretty deep for a harem-anime and
the comedy-aspect was also a big strength of the series.)
They are without a particular order, I don't want to make a clear ranking
between them, they are already the best of over 100 animes I've seen, so this
should be enough to just name them
Funny thing is I cant remember half the animes I watched, and how I felt
watching them, even though I know that I enjoyed them greatly. Atm Im struggling
to find animes that make me want more, but Kenich is currently my fav anime.
Samurai X's story plot is good and quite fast paced. However, after the kyoto
arc, the fillers are a little boring.
Naruto has its plus points with a good story plot and many kinds of jutsu which
sometimes is exaggerating, but on the contrary creative in a way.
Bleach do not have a very strong story plot and I watch mainly for the sake of
looking at the fighting scenes which is good.
Inuyasha is a little long winded, and the action scene is frequently reused. The
anime episodes ended quite early at 167, which don't give an ending at all
(disappointed).
Overall, I would say gundam seed and its sequel, gundam seed destiny are the
best in my opinion. With a good story plot and acceptable number of episodes
(50), it is exciting to watch the battle between the mobile suits. In whole, the
beginning (except gundam seed) attracts the viewers and also a good climax, with
a great ending. These are the qualities that a good anime should have, not
long-winded story line like naruto's fillers (it's killing me).
my favorite anime is still Kiddy Grade because I never get tired of watching it
... mostly because it has a complex story. I also liked Elfen Lied, Shingetsutan
Tsukihime, Spiral because I liked thame ... I don't have a defined reason ... :P
fate stay night, tsubasa, and gundam seed :]

if i had to choose 1 and just one, it's the dragon ball series. z was the best but gt was also good.

fullmetal alchemist, naruto, bleach and death note! o special mention for dragonball z, gundam wing and black lagoon (fate stay nights ok 2)
Hana yori Dango; Death Note; Fruits Basket; Kodomo no Omocha and lots more!
Haibane Renmei and Revolutionary Girl Utena. There are a ton more that I love, but nothing quite tops those two.

Black Lagoon has been added to my list. Starts a little slow and cliche, but after about 4 episodes it gets hella good.
