Hmm, I think you should look at Monster, Blade of the Immortal, Elfen Lied or other stuff I still don't know about. Err, wait until anime-source.com goes back up and look for any of the three. (The site is currently down and I don't know why...)

Zombie and Berserk also quite good. Or you might want to check out Leviathan and MPD Psycho...
