For me it has to the soundtracks of Naruto, One Piece, Vision of Escaflowne and Cowboy Bebop and of course Gundam Seed Destiny!

those really rock! Gundam seed has lots of very very lovely OPs, EDs and insert songs.
Love the Mai Hime soundtrack
and FMA has cool stuff in there (loves "Brothers" )

Um....its so hard...there are so many....for me, soundtracks like naruto, bleach, trinity blood, FMA, One Piece (of course!)
