All Inu Yasha and Rurouni Kenshin. I think this animes' have the most outstanding compialtions of ending songs.
Personal favorites are:
Rurouni Kenshin - Tactics, Heart of Sword, 1/3 no Jonjou na Kanjou
GTO - Last Piece
Hungry Heart - Mi Title
Get Backers - Ichibyou no Refrain, Namida no Hurricane
G-seed destiny - Life goes on

Orphan - Last kiss
chrno crusade - sayanora solitaire sung by saeko chiba. That song is just so beautiful.
And cowboy bebob last episode ending blue. If you have seen it, you would know, that song is so sad and fitting.

and the beginning to
Elfenlied and those are my two favorite animes

The RahXephon ending song was good, even with the crappy english, and so was the movie's ending song, Tune The Rainbow. The first Outlaw Star ending was really pretty, too... And of course, the Galaxy Angel ending, Horoscope Rhapsody.

Imamade Nandomo - The Massmissile. Naruto 5th ending.
Most of the Slayers endings were pretty awesome except Don't Get Discouraged. I liked The Fruits Basket ending as well and most of Yu-Gi-Oh's music.
Also Gravity.
And Half Pain from Witch Hunter Robin.
And .hack's ending.

I love listening to Spiral - Cocktail, Bleach - Thank You!!, and Chrno Crusade - Sayonara Solitaire. I love these songs, and I would actually sit through them otherwise I fast forwrd to the previews XP
