madlax / NOIR - because Kajiura Yuki writes simply awesome music.
Air TV - because both the vocal and the BGM for this (taken directly from the game) are incredible. Just listen to Aozora and see if I'm right.There's more... but those are probable the absolute best.

I agree that .hack//SIGN & .hack//liminality series both have good quality music. Some other I'd like to suggest are Neon genesis evangelion and Air TV.
