well i think for starters i suggest you watch El Hazard: Magnificent World, great anime, now lesse Mezzo DSA, good action and comedy i guess, series ummm Happy Lesson good comedy series
ROD the TV series another good action series
Ah! My Goddess TV series (subs only ATM) good comedyish romanticy type series, Also watch the Movie and if you can get your hands on em, the original OVA's
erm Excel Saga, Azumanga Diaoh, Onegai Teacher (Please Teacher) Onegai Twins, umm Comic Party.

Project ARMS definitely. ;) Love that anime. All dark and twisted mech-y-ness.
Samurai 7. Since it's a new anime, the coloring is amazing and the plot moves at a great pace. If you check out animenewsnetwork.com, you'll even see that theire budget is twice the average for an average anime episode. :D

It depends on the kinds of anime you like to watch mecha, comedy, magical girl, sci-fi, horror, samurai etc. Try watching trailers to see what you are interested in, and also what you download or get in your country. Or you could take another approach and watch what is currently popular in MT like Gundam Seed or Naruto. However I personally like Fruits Basket, Full Metal Panic, Karekano (animation in an aquired taste), Please Teacher/Twins, Witch Hunter Robin, .Hack//Sign and .Hack//Legend of the Twilight. A lot of these anime you will either really love or really hate, but you will make up your mind about which anime genre you like to watch and it will help you to choose new anime in the future.
