Love Hina is the funniest manga I've ever read... It's awesome.
Flame of Recca is both funny and fun to read.
GTO is a great manga.

If there was only one manga to choose, I'll select Hikaru no Go. It's about go... don't worry, I was also puzzled by the topic, I've thougth it was insane to write am anga about go, but I have given it a try and it's now my fave manga (and I've read more than 100 different titles).
