For 3d fighting i would have to say dead or alive series and for 2d, defitnetly guilty gear series.

If you're talking about "fighting" fighting games, then Tekken and Dead or Alive.
If you're talking about games where you pretty much do nothing but fight, then Dynasty Warriors and Samurai Warriors.

I haven't played many fighting games yet on console, but I enjoyed the fighting in Shenmue, and the energy I felt from playing Tekken 2 or 3 for the DreamCast.

Well I like DOA 2 (4-player mode is simply the best) and the good old Street Fighter. :)

Tekken 3 was my favorite for a long time, but DOA is gaining on that coveted status. DOA is just beautiful seeing the muscle deform and the animation is so fluid.
