Would anyone here know where to find footage of a mangaka's studio and mangakas at work? I've looked around and I can't find anything.

Try doing a search for "ghibli interview" on Youtube. There's a documentary about the making of Princess Mononoke on there that has some scenes of Hayao Miyazaki at his workstation. (Not exactly manga, but animation is close, ne?)
