I like sharp eyes. With darker colors usually. Some of my favorites are
Alucard's from hellsing and Demon Eyes Kyo from Samurai Deeper Kyo and many
others.
Eyes that have good contrast - so, dark eyes with pale skin, or really clear,
pale eyes with darker skin, something like that. And I hate eyes that are really
really huge - so, nothing against overall graphics from this anime, but I
generally don't like the eyes from, say, Fruits Basket.
I love the large, soft eyes of kiddie characters like the Digi Charat girls and
the narrowed mature eyes of the demon characters like Sesshoumaru from Inuyasha
and Kurama from Yu Yu Hakusho.
Generally, though, I love detailed eyes; the ones that look like they put a lot
of effort into them. Like the ones in the OVAs for Ah! Megami-sama and the OVA
Ranam 1/2 characters.
Or they could just be really unusual colours. LOL ^_^
Big eyes? No not for me, they're just too girlie for me. You know those totally
shoujo eyes. MKR is still good though. I mostly like tense eyes that aren't too
big or too small. The mangaka who draws Ah My Goddess, his eye style is cool.
The eyes in Yotsubato and Azumanga Daioh are nicely exaggerated and
clean-looking, though I kind of like Ken Akamatsu's eyes better. I can tolerate
Clamp eyes as well.

I really love the color of Kira's and Athrun's eyes in Gundam Seed...

the teenager look.
For the mature look, I go for Genjo Sanzo and Kougaiji's eyes in Saiyuki.

Apart from that, my favorite anime eyes are those of Lucy in Elfen Lied.
