I am currently using WinAVI's MP4 converter, because its simple.
What would be the best settings to have mid to high quality video at the
smallest size for that level of quality?
Make sure you convert it to your iPod's native resolution whatever that is. Pick
a reasonable bitrate for the vidoe and use AAC 128kbps for the audio. To get the
best quality use multipass encoding, it takes heaps longer, but the results are
far better than a rush job.
You'll need to do a bit of trial and error to see how each setting turns out
though.
