The battle between Aoshi-sama and Kenshin in Houji's library was cool.
The battle between Shishio, Aoshi, Saito, Sanosuke and Kenshin was the best.

Jubei-Chan 2 had an amazing fight scene at the end between Yaguu Jubei and Yaguu
Freisha. Two samurai girls with outstanding sword skills clashing in a forest.

Okay, I'm gunna go and pick something weird. *slight NGE spoiler* (better to be
safe than sorry, i suppose. though i'll be stumped if the world hasn't already
seen the series.)
Can't remember the exact episode number, but it's when Shinji's Eva has Kaoru in
its fist and Shinji's fighting with himself over what to do. And the music's
just playing. Nothing's moving, and you know what's going to happen, but it
holds your attention all the same. I love it.
The two fights I can watch over and over again are the Gaara vs. Rock Lee fight
in Naruto, and the Kuwabara vs. Risho fight in Yu Yu Hakusho. The amount of
willpower displayed in both fights are incredible.
