deep and very complicate but the presentation is incredible; and if you want to
watch an anime with good concept) Cowboy Beebop, Samurai Champloo, Witch Hunter
Robin, Wolf Rain, Samurai 7 (this one is not much popular, but personally I
really like it) Once Piece, Death Note, GunxSword, ...
School Days if you're really into drama and intrigue.......

As far as OVAs are concerned I would call attention to Tenchi Muyo!, Ah! (or
Oh!) My Goddess, and Rurouni Kenshin Trust and Betrayal.
As far as TV series go I would say Macross, Cowboy Bebop, Neon Genesis
Evangelion, Vandread, and Bleach.
I'd have to say Death-Note.. Not because it's my fav, but rather for the reason
that practically every single person I know who watched this as his/her first
anime series, got into anime through it...
As far as quallity goes, I'd pick Kino no Tabi and Cowboy Bebop.
For the more mature audience, no one's anime experience is complete without
"Elfen Lied". Of course, there is also "Fate/Stay Night",
"Shakugan no Shana", and "Death Note".
In our little and happy life ^^ we've seen many series of anime... some sad other exciting and others not as much....

Ok, for this one, I think I should not said my fave : Rahxephon and ElfenLied (it's not for everyone, I know).
First, I'm agree with wrathofsatan, Gundam is a must. And then, Neon Genesis Evangelion.
