Hm, tough one...
I haven't seen the whole series yet, only up to ep.130 (you haven't seen it yet, ne? It's awesome, watch it some time! If you have BT, they have most of the ep. in animesuki.com) but my favorite match would have to be the one betweem Ryoma and Sanada. He was awesome there!
Fuji was pretty cool against Kirihara too...but I was so mad that he got beat up- One of the many reasons I can't like Kirihara for the life of me. ~_~

Sanada VS Ryoma in the Kantou Regional's, Ryoma snapped n used all the moves and styles he had seen b4 (Excluding Fuji's triple counters n some others)
Atobe/Sanada Vs Billy n Lee from US, the Tanhauser's Serve was wicked and the Tango 2 Destruction
Fuji VS Kirihara, Fuji went all out which was wicked n he copied Kirihara's Knuckle Serve n used it against him...it was damn cool
