I really enjoyed it, especially since I had been disappointed by other vampire series such as Trinity Blood, and wasn't actually expecting that much out of Hellsing. I didn't mind the ending, although I would have liked to see more. I absolutely recommend the series - Alucard has got to be one of the best male leads I've seen in a very long time, and the script is priceless (in English at least). I usually watch my anime subbed, but this one is actually better in dubbed, I believe.

I haven't seen the original, but the Ultimate is the greatest anime I've ever seen! It's a must watch. It's so bloody... somebody gets their limbs cut off like, every 10 seconds, it's awsome!
