I'll just recommend the recent stuff. "CLAYMORE" is excellent. I'm actually not into fantasy or European medieval themed anime, but I'm making this one an exception. It's that cool, despite the less satisfactory conclusion. Also, beautiful graphics, nice music & a great Japanese voice cast. Nightmare who performs the OP & ED themes for "Death Note" does an even better job with the OP theme for "CLAYMORE". The ED theme by Kosaka Riyu is also brilliant.

"D.Gray-man" is also worth watching but some of the manga fans don't like it cos of too many filler eps. If you've never read the manga, then you should be able to enjoy it more :)

"Monster" came out some years ago, but it's another great anime worth mentioning. It has suspenseful & philosophical themes.
